I dont know about you but my family loves going to Chipotle. Eventhough the closest one to us is about 45 minutes away we can't help but make the trek there to get our favourite mexican food. Over the last few months I have tried many copycat recipes and have developed one that has been a huge hit at my house.
CHIPPOTLE CHICKEN BURRITO
chicken thighs or chicken breats (whatever you prefer)
juice of 2 limes
himelayan pink salt
Directions: place chicken in a oven safe dish, sprinkle with himelayan pink salt and mesquite seasoning and cover with lime juice, bake at 350 for 45 min. When chicken is done cut into pieces ready for your burrito.
LIME CILANTRO RICE
1 tbsp oil (canola/vegetable) 2 tsp fresh cilantro, chopped fine 1 fresh key lime (or ½ regular lime) ½ tsp salt (I use himelayan salt) 1 cup long grain white rice 2 cups water
Directions: Sautee the rice in oil until almost translucent (as if you are making a risotto). Add water, bring to a boil. As soon as the water begins to boil, turn the heat down low. Simmer, covered for 15-20 minutes, or until all water is absorbed. Turn off heat. DON'T PEEK. LEAVE IT COVERED for 30 minutes (this is the "steaming" part.... Chipotle steams rice every hour). This is what makes the rice fluffy. You won’t be happy with yourself if you don’t do this. Be patient. Good things come to those who wait. Remove lid, let some of the steam out. It may be helpful to transfer rice into a mixing bowl for the next step. Mix salt and juice of key lime together until salt is dissolved. Pour it over rice, fluff with a fork. Sprinkle in cilantro, and toss well to evenly coat with cilantro and lime mixture.
tomatoes(diced into small pieces)
juice of 1 lime
Directions: mash avacado, add remaining ngredience and stir.
Now you have all the components to put everyhing together. Here is the tricky part, te art of wrapping the burrito. I always try to get the biggest burritos you can find. Warm the burrito up then place a layer of rice, a layer of chicken, and a layer of quacamole ( and anything else you want to add like salsa or sour cream). Roll it tight pulling in each side to make a perfect looking burrito.
Voila, now you can make this favourite mexian recipe at home instead of venturing out.
