HOLIDAY COCKTAILS

I know the holidays are looking very different this year, we will not have people over and no holiday parties, but who says we can't all enjoy some holiday cocktails at home. I love experimenting with cocktails during the holidays and I have compiled a few of my favourites for you here.




JOLLY CITRUS COCKTAIL

INGREDIENTS:

  • · 2 ounces vodka

  • · 1/2 ounce St. Germain (elderflower liquor)

  • · 1/3 cup fresh squeezed clementine or blood orange juice

  • · pomegranate arils, for topping

  • · 1 sprig fresh thyme or mint


INSTRUCTIONS:

In a large pitcher, combine the vodka, elderflower liquor (if using), and clementine juice. Chill until ready to serve.

Just before serving, add ice, ginger beer, and pomegranate arils. Serve garnished with thyme or mint.




PEPERMINT BARK MIMOSA

INGREDIENTS:

  • · 1/4 C. Dark chocolate chips, melted

  • · 3 candy canes, crushed

  • · 3 oz. peppermint vodka, divided (I used Smirnoff Peppermint Vodka)

  • · 3 oz. White Crème de Cacao, divided

  • · 1 bottle prosecco

  • · 6 candy canes, whole


INSTRUCTIONS:

Over low heat in a saucepan melt the dark chocolate chips. Pour melted chocolate onto a small plate.

In a Ziplock bag place the three candy canes (unwrapped) and crush with a rolling pin. Pour crushed candy canes onto a separate plate.

Dip rims of champagne flutes first in chocolate, then in crushed candy canes to coat. However you can skip the candy canes if you want.

Add half an ounce of peppermint vodka to each glass, then half an ounce of white Crème de cacao. Top off the glass with Prosecco.

Garnish with full candy canes and enjoy!






WHITE CRANBERRY MARGARITA (LARGE BATCH)

INGREDIENTS:

  • 12 ounces tequila

  • ·12 ounces white cranberry juice

  • · 8 ounces orange liquor (I used triple sec)

  • · 8 ounces lime juice

  • · 8 ounces coconut rum

  • · 8 ounces coconut milk

  • · 4 ounces simple syrup

  • · Rosemary and Fresh Cranberries to garnish


INSTRUCTIONS:

1. Add all the drink ingredients into a large pitched and mix together. I recommend keeping a drink stirrer in the pitcher to stir before pouring another glass with a creamy drink like this.

2. Pour over ice, garnish with fresh cranberries and a small sprig of rosemary for a festive look, and enjoy!




WHITE CHRISTMAS MOJITO

INGREDIENTS:

  • 3/4 cup of lime juice

  • 1/4 cup of packed mint leaves, plus more for garnish

  • 1/2 cup of sugar 1/2 cup of white rum

  • 1/2 cup of coconut rum

  • 1 cup of canned coconut milk

  • sparkling water

  • pomegranate arils


INSTRUCTIONS:

In a larger pitcher, muddle the mint leaves in the sugar and lime juice.

Using a strainer, remove the muddled mint leaves (optional).

Add the white rum, coconut rum, and canned coconut milk to the pitcher and stir vigorously until all ingredients are combined well.

Fill four glasses halfway full with ice and fill 3/4 full with coconut rum mixture.Top off each glass with sparkling water. Garnish with mint leaves and pomegranate arils and enjoy!




EGGNOG MARTINI

INGREDIENTS:

  • 4 1/2 oz eggnog

  • 1 1/2 oz vanilla vodka

  • 3/4 oz Amaretto

  • Pinch each of nutmeg & cinnamon

  • Garnish: silver sugar nutmeg, cinnamon stick

INSTRUCTIONS:

Dip rim of glass in a little vanilla vodka then into silver sugar.

In a cocktail shaker, combine eggnog, vanilla vodka, Amaretto and a pinch of each spice.

Add a little crushed ice and shake.

Strain into prepared glass and enjoy!
