Sundays are one of my favourite family days. I have always grown up with Sunay dinners at my house and when I had kids I told myself this is something I want to continue for them because I knew how special they were to me. I try to make new creations all the time, I was at a friends this past week and had the pleasure to try these delicious meatballs she made. I am usually not a big fan but these were to die for, not too overpowering and tasted light. I am making these for my Sunday family dinner today so I am sharing the recipe with you.
2lbs ground pork
1/4 finely chopped prosciutto ( could also use speck or pancetta)
1 tsp red pepper flakes
1 tbsp ground fennel seed
1/4 chopped fresh parsley
1/2 Panko bread crumbs
1/2 cup ricotta cheese
2 large eggs
Splash of olive oil
Preheat oven to 450. Mix all about ingredient all together in a bowl, make about 2tbsp sized meatballs and place on a oiled pan. Cook for 15-20 min
As you can see they are pretty simple, even simple enough to get the kids involved in helping to make them. What a perfect Sunday Family Day. I hope you love them as much as I do.
