Turhey day is over, all the guest have left(hopefully) the house is cleaned(I hope your guest helped). If you are anything like me I always make way too much food and have tons of leftovers. I am always trying to figure out what to make with them so they are not wasted. My family loves sandwiches, and the day after thanksgiving we keep it very casual and everyone eats whenever they want. This sandwich is perfect, I love the kick it and I love avocado so this recipe is fitting.

2 tablespoons mayonnaise
1 teaspoon Sriracha
splash of lime juice
2 ounces of leftover turkey
1/4 - 1/2 avocado, sliced
2 pieces gluten free bread, toasted
In a small bowl combine mayonnaise, sriracha and lime juice. Mix until smooth.
Spread aioli mixture on two slices of bread evenly.
Top each slice of bread with avocado and mash it into the bread.
Top one slice with turkey, arugula and alfalfa. Top with remaining bread.
Heat olive oil in pan over medium heat and pan sear the sandwich on both sides until browned.
